CAIO at Oriocenter: a pinsa menu for counter service

For the Percassi Group's first CAIO, opened at Oriocenter in May 2017, the consultation began with a window display. Anyone walking through the food court needed to be able to look at the counter, understand the flavors, and choose a pinsa. We built the menu for that moment and trained the team who would serve it.

A menu chosen at the window display

The brief was to create a menu for those walking through a shopping center and deciding where to stop at the counter. We combined the most familiar Italian recipes with some new fillings, choosing the combinations based on color and product readability in the display case.

The Transition from Recipe to Service

We worked with the staff both on the preparation of the pinsa and on the presentation. The first day immediately put the team to the test: the school's written report at the time of opening recorded over 400 pinsa ordered in the first three hours.
